A wine exclusively made from grapes of our "Casa del Conde" vineyard. This vineyard is unique because it was not affected by phyloxera and has its original Tempranillo roots, something rare to encounter in Europe. We have treated this vineyard in a natural way and is officially registered as an organic vineyard.

The grapes were hand-picked from the vineyard and they were transported in small boxes to the winery were the destalked grapes were macerated before fermentation for several days in French Allier oak barrels at a temperature between 1 and 7 ºC. For this purpose we installed a special intercooler to keep the grapes at low temperature. This was done to obtain a maximum fixation of colour and flavour before fermentation. The fermentation took place during 2 weeks in the same oak barrels. After this, the grapes were carefully pressed in a small pneumatic press and the wine continued in barrel to undergo its malolactic fermentation. The wine continued its ageing in barrel till it was bottled during October 2005. Now we have released the first vintage of "Grial de Avalon 2003".
